Description
An easy homemade version of Chick-fil-A Chicken Minis featuring bite-sized fried chicken tucked into soft, buttery mini rolls brushed with honey butter.

- 2 boneless, skinless chicken breasts, cut into 1-inch pieces
- 1 cup dill pickle juice
- 1/2 cup milk
- 1 large egg
- 1 cup all-purpose flour
- 1 tbsp powdered sugar
- 1 tsp paprika
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1/4 tsp garlic powder
- 1/4 tsp cayenne pepper (optional)
- Oil for frying
- 12 mini yeast rolls or dinner rolls
- 2 tbsp butter, melted
- 1 tbsp honey
Instructions
- Place chicken pieces in a bowl with pickle juice. Marinate in the refrigerator for at least 30 minutes, preferably 1 hour.
- In a separate bowl, whisk together milk and egg. In another bowl, combine flour, powdered sugar, paprika, salt, pepper, garlic powder, and cayenne (if using).
- Remove chicken from marinade, pat dry, and dip each piece into the milk-egg mixture, then dredge in the flour mixture until fully coated.
- Heat oil in a deep skillet or fryer to 350°F (175°C). Fry chicken pieces in batches for about 3-4 minutes per side or until golden brown and fully cooked. Drain on paper towels.
- While chicken is frying, warm the rolls according to package directions.
- Mix melted butter with honey and brush over the tops of the warm rolls.
- Slice the rolls and place a piece of fried chicken in each roll to assemble the minis.
Notes
- For extra flavor, use a small amount of garlic powder in the butter-honey glaze.
- You can use frozen yeast rolls if you don’t want to make them from scratch.
- Serve immediately for best texture and taste.
