Description

This Easy Chuck Roast Recipe is a comforting, hearty dish featuring tender beef slow-cooked with vegetables and savory seasonings. Perfect for a weeknight dinner or Sunday supper.


Ingredients

  • 34 lbs chuck roast
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 tablespoon Worcestershire sauce
  • 1 cup beef broth
  • 4 carrots, peeled and cut into chunks
  • 4 potatoes, peeled and cut into chunks
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 2 sprigs fresh rosemary (or 1 tsp dried)
  • 2 sprigs fresh thyme (or 1 tsp dried)

Instructions

  1. Preheat your oven to 300°F (150°C).
  2. Season the chuck roast with salt, pepper, garlic powder, and onion powder.
  3. Heat olive oil in a large Dutch oven over medium-high heat. Sear the roast on all sides until browned, about 3-4 minutes per side.
  4. Remove the roast and set aside. Add chopped onion and garlic to the pot, sauté for 2-3 minutes.
  5. Return the roast to the pot. Add Worcestershire sauce and beef broth.
  6. Arrange carrots and potatoes around the roast. Add rosemary and thyme on top.
  7. Cover with lid and place in preheated oven. Cook for 3-4 hours or until the roast is fork-tender.
  8. Remove from oven and let rest for 10 minutes before slicing and serving with vegetables and pan juices.

Notes

  • For extra flavor, marinate the roast overnight with the seasonings.
  • Use a slow cooker on low for 8 hours as an alternative method.
  • Leftovers make great sandwiches or can be used in soups.
