- 4 cups powdered sugar
- 2 tsp vanilla extract
- 3 tbsp milk (adjust as needed for consistency)
- Green gel food coloring
Decorations
- Mini candy canes
- Red and green sprinkles
- Edible snowflake decorations or fondant snowflakes
- Powdered sugar (for a snowy effect)
- Mini gingerbread cookies (optional)
Instructions
- Prepare the Cupcakes: Preheat your oven to 350°F (175°C) and line a muffin tin with festive cupcake liners to prepare for baking.
- Mix Cake Batter: In a large bowl, combine the vanilla cake mix, vegetable oil, eggs, water, and vanilla extract. Mix until smooth and fully incorporated.
- Fill Liners: Spoon the batter into the lined muffin tin, filling each cup about two-thirds full to allow room for rising.
- Bake the Cupcakes: Bake for 18 to 22 minutes, or until a toothpick inserted into the center of a cupcake comes out clean. Then, remove from oven and let them cool completely.
- Make the Buttercream Frosting: Beat the softened butter in a mixing bowl until creamy and smooth. Gradually add the powdered sugar while continuing to beat.
- Flavor and Adjust Frosting: Mix in the vanilla extract and milk, beating the frosting until it becomes fluffy. Adjust the milk quantity as needed to reach a pipeable consistency.
- Add Color: Stir in green gel food coloring until the frosting is a vibrant, even green shade.
- Frost and Decorate: Using a piping bag fitted with a star tip, frost the cooled cupcakes with the green buttercream. Decorate with mini candy canes, red and green sprinkles, edible snowflake decorations, and optionally, mini gingerbread cookies. For a snowy finish, lightly dust the cupcakes with powdered sugar.
