Ingredients
Dry Ingredients:
- 1 cup all-purpose flour
- 2 tablespoons unsweetened cocoa powder
- 2 tablespoons granulated sugar
- ¼ teaspoon salt
Wet Ingredients:
- 3 large eggs
- 1 ½ cups milk
- 2 tablespoons melted butter (plus more for greasing)
- 1 teaspoon vanilla extract
Instructions
- Mix Dry Ingredients: In a large mixing bowl, whisk together the flour, cocoa powder, sugar, and salt.
- Prepare Wet Ingredients: In another bowl, whisk the eggs, milk, melted butter, and vanilla extract until smooth.
- Combine and Rest: Gradually pour the wet ingredients into the dry ingredients, whisking until no lumps remain. Let the batter rest for 15–30 minutes at room temperature.
- Cook Crepes: Heat a non-stick skillet or crepe pan over medium heat and lightly grease with butter. Pour about ¼ cup of batter into the pan, tilting to evenly coat the bottom. Cook for 1–2 minutes until the edges lift slightly and the underside is set, then flip and cook for another 30–60 seconds.
- Serve: Transfer to a plate and repeat with the remaining batter. Serve warm with whipped cream, fresh berries, or a drizzle of chocolate sauce.
Notes
- Letting the batter rest helps the flour fully hydrate and creates a more tender crepe.
- For extra flavor, try adding a splash of espresso or orange liqueur to the batter.
