Ingredients
For the Cookies
- 1 box (15.25 oz) chocolate cake mix
- 2 large eggs
- 1/2 cup (1 stick) unsalted butter, melted and cooled
- 1 teaspoon vanilla extract
For the Filling
- 4 oz cream cheese, softened
- 1/4 cup unsalted butter, softened
- 1 1/4 cups powdered sugar
- 1 teaspoon vanilla extract
- Pinch of salt
Instructions
- Prepare the Oven and Baking Sheet Preheat your oven to 350°F (175°C). Line two large baking sheets with parchment paper or silicone baking mats for an easy release and quick clean up.
- Make the Cookie Dough In a large mixing bowl, combine the chocolate cake mix, eggs, melted butter, and vanilla extract. Stir until everything is fully combined and a thick dough forms. The dough will be sticky, this is normal.
- Shape and Bake the Cookies Using a tablespoon or small cookie scoop, drop even-sized mounds of dough onto the prepared baking sheets, spacing them about 2 inches apart. Bake for 9-11 minutes, or until the edges are set but the centers look slightly soft. Do not overbake for soft cookies.
- Cool the Cookies Allow the cookies to cool on the baking sheets for 5 minutes, then transfer to a wire rack to cool completely before assembling the sandwiches.
- Prepare the Filling While the cookies cool, beat together cream cheese and butter in a medium mixing bowl until smooth and fluffy. Gradually add the powdered sugar, vanilla, and a pinch of salt. Beat until the filling is creamy and spreadable. If too thick, add a teaspoon of milk as needed.
- Assemble the Sandwich Cookies Spread or pipe about 1 tablespoon of filling onto the flat side of half the cookies. Top each with a second cookie, pressing gently to create a sandwich. Repeat until all cookies are paired.
Notes
- You can substitute store-bought frosting for the homemade filling if short on time.
- Add mini chocolate chips or sprinkles to the filling for extra texture and flair.
- Chill the assembled cookies for firmer filling and clean edges.
- Store cookies in an airtight container in the refrigerator for up to 5 days.
- Let cookies sit at room temperature for a few minutes before serving if refrigerated.
