Description

These Easy Chocolate Cake Mix Sandwich Cookies are a decadent treat that comes together in under 30 minutes. Soft, chewy chocolate cookies made from cake mix are sandwiched with a creamy homemade filling—perfect for parties, lunchbox surprises, or whenever a chocolate craving strikes. No need for complex baking skills; this recipe relies on pantry staples and a few simple steps for bakery-worthy results every time.

Ingredients

For the Cookies

  • 1 box (15.25 oz) chocolate cake mix
  • 2 large eggs
  • 1/2 cup (1 stick) unsalted butter, melted and cooled
  • 1 teaspoon vanilla extract

For the Filling

  • 4 oz cream cheese, softened
  • 1/4 cup unsalted butter, softened
  • 1 1/4 cups powdered sugar
  • 1 teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. Prepare the Oven and Baking Sheet Preheat your oven to 350°F (175°C). Line two large baking sheets with parchment paper or silicone baking mats for an easy release and quick clean up.
  2. Make the Cookie Dough In a large mixing bowl, combine the chocolate cake mix, eggs, melted butter, and vanilla extract. Stir until everything is fully combined and a thick dough forms. The dough will be sticky, this is normal.
  3. Shape and Bake the Cookies Using a tablespoon or small cookie scoop, drop even-sized mounds of dough onto the prepared baking sheets, spacing them about 2 inches apart. Bake for 9-11 minutes, or until the edges are set but the centers look slightly soft. Do not overbake for soft cookies.
  4. Cool the Cookies Allow the cookies to cool on the baking sheets for 5 minutes, then transfer to a wire rack to cool completely before assembling the sandwiches.
  5. Prepare the Filling While the cookies cool, beat together cream cheese and butter in a medium mixing bowl until smooth and fluffy. Gradually add the powdered sugar, vanilla, and a pinch of salt. Beat until the filling is creamy and spreadable. If too thick, add a teaspoon of milk as needed.
  6. Assemble the Sandwich Cookies Spread or pipe about 1 tablespoon of filling onto the flat side of half the cookies. Top each with a second cookie, pressing gently to create a sandwich. Repeat until all cookies are paired.

Notes

  • You can substitute store-bought frosting for the homemade filling if short on time.
  • Add mini chocolate chips or sprinkles to the filling for extra texture and flair.
  • Chill the assembled cookies for firmer filling and clean edges.
  • Store cookies in an airtight container in the refrigerator for up to 5 days.
  • Let cookies sit at room temperature for a few minutes before serving if refrigerated.
