Description

These Easy Chicken Tostadas are a quick and flavorful meal featuring seasoned chicken, refried beans, cheese, and all your favorite toppings piled high on crispy tostada shells.


Ingredients

For the Chicken:

  • 2 cups cooked shredded chicken
  • 1 tablespoon olive oil
  • 1 teaspoon chili powder
  • ½ teaspoon cumin
  • ½ teaspoon garlic powder
  • Salt and pepper to taste

For Assembling:

  • 8 tostada shells
  • 1 can (15 oz) refried beans
  • 1 cup shredded cheddar or Mexican blend cheese
  • 1 cup shredded lettuce
  • ½ cup diced tomatoes
  • ¼ cup diced red onion
  • ¼ cup sour cream
  • ¼ cup salsa or hot sauce
  • Chopped cilantro and lime wedges for garnish


Instructions

  1. Cook the Chicken: In a skillet over medium heat, warm olive oil and add shredded chicken. Season with chili powder, cumin, garlic powder, salt, and pepper. Cook for 2-3 minutes until heated through.
  2. Assemble Tostadas: Spread refried beans on tostada shells. Top with chicken, cheese, lettuce, tomatoes, red onion, sour cream, salsa, and garnish with cilantro and lime.

Notes

  • You can use rotisserie chicken for a quick shortcut.
  • Add sliced avocado or pickled jalapeños for extra flavor.
