Ingredients

Base:

  • 1 tablespoon olive oil
  • 1 small yellow onion, diced
  • 2 cloves garlic, minced
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon dried basil
  • 1/4 teaspoon red pepper flakes (optional)

Soup:

  • 3 cups chicken broth
  • 1 (15-ounce) can crushed tomatoes
  • 1 cup marinara sauce
  • 2 cups cooked shredded chicken
  • 1/2 cup small pasta (like ditalini or elbow)
  • 1/4 cup grated Parmesan cheese
  • 1 cup shredded mozzarella cheese
  • Salt and pepper to taste
  • Chopped fresh basil or parsley for garnish (optional)


Instructions

  1. Prepare Base: Heat olive oil in a large pot over medium heat. Add diced onion and sauté until softened. Stir in garlic, oregano, basil, and red pepper flakes. Cook for 1 minute.
  2. Cook Soup: Add chicken broth, crushed tomatoes, and marinara sauce. Bring to a simmer, then add chicken and pasta. Cook for 10–12 minutes until pasta is tender.
  3. Finish: Stir in Parmesan and mozzarella until melted and creamy. Season with salt and pepper. Serve hot, garnished with fresh herbs.
