Ingredients
Base:
- 1 tablespoon olive oil
- 1 small yellow onion, diced
- 2 cloves garlic, minced
- 1/2 teaspoon dried oregano
- 1/2 teaspoon dried basil
- 1/4 teaspoon red pepper flakes (optional)
Soup:
- 3 cups chicken broth
- 1 (15-ounce) can crushed tomatoes
- 1 cup marinara sauce
- 2 cups cooked shredded chicken
- 1/2 cup small pasta (like ditalini or elbow)
- 1/4 cup grated Parmesan cheese
- 1 cup shredded mozzarella cheese
- Salt and pepper to taste
- Chopped fresh basil or parsley for garnish (optional)
Instructions
- Prepare Base: Heat olive oil in a large pot over medium heat. Add diced onion and sauté until softened. Stir in garlic, oregano, basil, and red pepper flakes. Cook for 1 minute.
- Cook Soup: Add chicken broth, crushed tomatoes, and marinara sauce. Bring to a simmer, then add chicken and pasta. Cook for 10–12 minutes until pasta is tender.
- Finish: Stir in Parmesan and mozzarella until melted and creamy. Season with salt and pepper. Serve hot, garnished with fresh herbs.
