Ingredients
Chicken Curry:
- 1 pound boneless, skinless chicken breasts or thighs, cut into bite-sized pieces
- 1 tablespoon vegetable oil
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 tablespoon fresh ginger, grated
- 2 tablespoons curry powder
- ½ teaspoon ground cumin
- 1 (14 oz) can diced tomatoes
- 1 cup coconut milk
- ½ teaspoon salt
- ¼ teaspoon black pepper
For Serving:
- Fresh cilantro for garnish (optional)
- Cooked rice
Instructions
- Heat the oil: In a large skillet over medium heat, add oil. Cook the onion until softened, about 3-4 minutes.
- Sauté aromatics: Stir in garlic and ginger; cook for another minute.
- Add spices: Add curry powder and cumin, stirring for 30 seconds.
- Cook chicken: Add chicken and cook until browned, about 5-7 minutes.
- Simmer: Pour in tomatoes and coconut milk. Season with salt and pepper. Simmer covered for 15-20 minutes until chicken is cooked through and sauce thickens slightly.
