Ingredients
Chicken and Vegetables
- 4 cups shredded chicken (rotisserie recommended)
- 1 (12 oz) bag frozen mixed vegetables
Cheddar Bay Biscuit Topping
- 1 (11.36 oz) box Red Lobster Cheddar Bay Biscuit Mix (including seasoning packet)
- 2 cups whole milk
- ½ cup butter (1 stick, melted)
Soup Mixture
- 1 (14.5 oz) can chicken broth (about 2 cups)
- 1 (10.5 oz) can cream of chicken soup
Seasonings
- Garlic powder, to taste
- Onion powder, to taste
- Black pepper, to taste
Instructions
- Preheat and Prep Dish: Preheat your oven to 375°F (190°C). Grease the sides of a large 9×13-inch baking dish to prevent sticking.
- Add Butter: Melt the butter and pour it evenly into the bottom of your prepared baking dish, ensuring the surface is well coated.
- Layer Chicken: Spread the shredded chicken evenly in a single layer over the melted butter.
- Add Vegetables and Season: Distribute the frozen mixed vegetables evenly over the chicken, then sprinkle with your desired seasonings such as garlic powder, onion powder, and black pepper. Use salt sparingly if needed, as other ingredients contain salt.
- Prepare Biscuit Batter: In a medium bowl, whisk together the Cheddar Bay Biscuit Mix, its seasoning packet, and whole milk until just combined. Carefully pour this mixture over the chicken and vegetables in the baking dish. Do not stir.
- Mix Soup and Broth: In the same bowl, whisk together the cream of chicken soup and chicken broth until smooth. Pour this mixture evenly over all the layers in the baking dish. Do not stir.
- Bake: Place the casserole uncovered on the center rack of your oven and bake for 55-65 minutes, or until the top is a deep golden brown. Check for doneness at 55 minutes, as oven times can vary.
- Rest and Serve: Remove the casserole from the oven and let it rest for about 10 minutes. This allows the sauce to thicken and makes serving easier. Enjoy your warm chicken cobbler casserole!
Notes
- Use rotisserie chicken for a quick shortcut; homemade shredded chicken works well too.
- You can substitute mixed vegetables with fresh or other frozen vegetables of your choice.
- Be careful not to stir the layers after adding the biscuit batter and soup mixture to maintain the layered cobbler effect.
- Letting the casserole rest after baking helps to thicken the sauce and improves texture.
- Season to taste but remember the biscuit mix and soup already contain salt; add additional salt sparingly.
