Description

Ingredients

For the casserole:

  • 2 cups cooked white rice
  • 2 cups cooked chicken (shredded or cubed)
  • 2 cups broccoli florets (steamed or blanched)
  • 1 (10.5-ounce) can cream of chicken soup
  • 1/2 cup sour cream
  • 1/2 cup milk
  • 1 1/2 cups shredded cheddar cheese (divided)
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup crushed buttery crackers or breadcrumbs (optional, for topping)


Instructions

  1. Preheat the oven: Preheat oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish.
  2. Prepare the casserole: In a large mixing bowl, combine cooked rice, chicken, broccoli, cream of chicken soup, sour cream, milk, 1 cup of cheddar cheese, garlic powder, onion powder, salt, and black pepper. Stir until well mixed.
  3. Bake: Transfer mixture to the prepared baking dish and spread evenly. Top with remaining 1/2 cup of cheese and crushed crackers or breadcrumbs if using. Bake uncovered for 25–30 minutes until hot and bubbly and the top is golden brown.
