Ingredients
For the casserole:
- 2 cups cooked white rice
- 2 cups cooked chicken (shredded or cubed)
- 2 cups broccoli florets (steamed or blanched)
- 1 (10.5-ounce) can cream of chicken soup
- 1/2 cup sour cream
- 1/2 cup milk
- 1 1/2 cups shredded cheddar cheese (divided)
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup crushed buttery crackers or breadcrumbs (optional, for topping)
Instructions
- Preheat the oven: Preheat oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish.
- Prepare the casserole: In a large mixing bowl, combine cooked rice, chicken, broccoli, cream of chicken soup, sour cream, milk, 1 cup of cheddar cheese, garlic powder, onion powder, salt, and black pepper. Stir until well mixed.
- Bake: Transfer mixture to the prepared baking dish and spread evenly. Top with remaining 1/2 cup of cheese and crushed crackers or breadcrumbs if using. Bake uncovered for 25–30 minutes until hot and bubbly and the top is golden brown.
- Serve: Let rest for 5 minutes before serving.
