- 4 boneless, skinless chicken breasts
- 1 tablespoon olive oil
- 1 teaspoon Italian seasoning
- Salt and pepper, to taste
- 4 medium tomatoes, diced
- 2 cloves garlic, minced
- 1/4 cup fresh basil, chopped
- 1 tablespoon balsamic vinegar
- 1 tablespoon olive oil (for topping)
- 1/4 teaspoon salt
- 1/4 cup shredded mozzarella or parmesan cheese (optional)
Instructions
- Preheat grill or skillet over medium-high heat.
- Brush chicken breasts with olive oil and season with Italian seasoning, salt, and pepper.
- Grill or cook chicken for 6-7 minutes per side or until cooked through and juices run clear.
- While chicken cooks, combine diced tomatoes, garlic, basil, balsamic vinegar, olive oil, and salt in a bowl. Mix well.
- Once chicken is done, transfer to a plate and let rest for a couple of minutes.
- Top each chicken breast with a generous spoonful of the tomato mixture.
- Optional: Sprinkle shredded mozzarella or parmesan on top and let it melt slightly before serving.
Notes
- For extra flavor, marinate the chicken in balsamic vinaigrette for 30 minutes before cooking.
