Ingredients
Vegetables and Meat
- 1/2 cup onion, diced (about 1 small onion)
- 1 cup green pepper, diced
- 1 cup ham, diced
Egg Mixture
- 8 large eggs
- 2 tablespoons milk
- 1 teaspoon hot sauce
Base
- 4 tortillas or whole wheat pitas
- Olive oil (for brushing tortillas)
- 2 tablespoons olive oil (for sautéing vegetables and ham)
Toppings
- 1 cup shredded cheese (Monterey Jack, Colby, or Mozzarella)
- Chives, optional, for garnish
Instructions
- Prepare the Vegetables and Ham: Heat 2 tablespoons of olive oil in a skillet over medium heat. Add the diced onion, green pepper, and ham, sautéing until the vegetables are soft and the ham is lightly browned, about 4-5 minutes.
- Make the Egg Mixture: In a bowl, whisk together the 8 eggs, 2 tablespoons of milk, and 1 teaspoon of hot sauce until well combined and slightly frothy. Set aside.
- Cook the Eggs: Pour the egg mixture into the skillet with the sautéed vegetables and ham. Stir gently to scramble, cooking until the eggs are just set but still moist, approximately 2-3 minutes. Remove from heat.
- Prepare the Tortilla Base: Preheat the oven to 400°F (200°C). Lightly brush both sides of each tortilla or whole wheat pita with olive oil. Place them on a baking sheet.
- Assemble the Breakfast Pizzas: Evenly distribute the cooked egg mixture over each tortilla, spreading it out to cover the surface. Sprinkle the shredded cheese generously on top.
- Bake the Pizzas: Place the baking sheet in the preheated oven and bake for 6-8 minutes or until the cheese is melted and bubbly and the edges of the tortillas are crispy.
- Garnish and Serve: Remove the pizzas from the oven and sprinkle with chopped chives if desired. Slice and serve immediately for a warm, tasty breakfast.
Notes
- You can substitute the ham with cooked bacon or sausage for a different flavor.
- Feel free to add other vegetables like tomatoes or mushrooms for extra nutrition and taste.
- Using whole wheat pitas instead of tortillas adds more fiber and a heartier texture.
- Adjust the amount of hot sauce according to your spice preference.
- For a vegetarian version, omit the ham and add extra veggies or tofu.
