Description

This Easter Poke Cake is a delightful and colorful dessert perfect for spring celebrations. Made with a moist vanilla cake base, it features pockets filled with flavored gelatin that create a fun, bursting effect when sliced. Topped with light whipped topping and festive sprinkles, this cake is sure to impress guests with both its flavor and festive appearance.

Ingredients

Cake Ingredients

  • 1 box vanilla cake mix
  • 3 large eggs (room temperature)
  • 1/2 cup vegetable oil
  • 1 cup water (or milk for richness)

Gelatin and Topping

  • 1 package (3 oz) gelatin powder (any color)
  • 1 tub (8 oz) whipped topping
  • 1/4 cup sprinkles

Instructions

  1. Preheat and Prepare Pan: Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking dish to prevent the cake from sticking.
  2. Mix Batter: In a large bowl, combine the vanilla cake mix, water (or milk), eggs, and vegetable oil. Stir until the batter is smooth and well blended.
  3. Bake Cake: Pour the batter evenly into the prepared baking dish. Bake for 30-35 minutes or until a toothpick inserted into the center comes out clean.
  4. Poke Holes: After allowing the cake to cool slightly but while still warm, use a fork to poke holes evenly all over the surface of the cake. This will allow the gelatin to seep into the cake for flavor and color.
  5. Prepare and Pour Gelatin: Dissolve the gelatin powder in boiling water according to package instructions. Then, evenly pour the dissolved gelatin over the holes in the cake to soak in.
  6. Chill Cake: Refrigerate the cake until the gelatin is fully set and the cake is completely chilled, usually at least two hours.
  7. Add Topping and Decorate: Spread the tub of whipped topping evenly over the chilled cake. Finally, sprinkle the top with the colorful sprinkles for a festive touch before serving.

Notes

  • Using milk instead of water in the cake batter adds extra richness and flavor.
  • Make sure the cake is still slightly warm when poking holes to allow the gelatin to seep in properly.
  • Choose your favorite flavored gelatin colors to customize the look and taste.
  • For best results, chill the cake thoroughly to let the gelatin set completely before adding the topping.
  • Store leftover cake covered in the refrigerator; consume within 3-4 days for freshness.
