Description

A quick and easy dump-and-bake casserole featuring tender chicken, creamy tzatziki sauce, and fluffy rice, all baked together in one dish for a flavorful Mediterranean-inspired meal.

  • 1 1/2 lbs boneless, skinless chicken breasts or thighs, cut into bite-sized pieces
  • 1 cup long grain white rice, uncooked
  • 1 1/2 cups chicken broth
  • 1 cup tzatziki sauce
  • 1/2 cup crumbled feta cheese
  • 1 cup cherry tomatoes, halved
  • 1/2 cup diced cucumber
  • 1/4 cup sliced kalamata olives
  • 1 tablespoon olive oil
  • 1 teaspoon dried oregano
  • Salt and black pepper, to taste
  • Fresh parsley or dill, for garnish (optional)

Instructions

  1. Preheat the oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish.
  2. In the prepared dish, combine uncooked rice, chicken broth, and tzatziki sauce. Stir to mix evenly.
  3. Add the chicken pieces, cherry tomatoes, cucumber, olives, oregano, salt, and pepper. Mix everything until well distributed.
  4. Drizzle olive oil over the top and sprinkle with feta cheese.
  5. Cover the dish tightly with foil and bake for 45 minutes.
  6. Remove foil and bake an additional 10-15 minutes, or until the rice is tender and the liquid is absorbed.
  7. Let sit for 5 minutes before serving. Garnish with fresh parsley or dill if desired.
