Description

A quick and delicious Dorito Casserole combining seasoned ground beef, diced tomatoes with green chilies, and melty cheddar cheese layered over crushed Doritos, baked to bubbly perfection and optionally topped with fresh lettuce and tomatoes for added crunch and freshness. This comforting casserole is perfect for a family meal or casual gathering.

Ingredients

Main Ingredients

  • 1 lb ground beef
  • 1 packet taco seasoning mix
  • 1 can (10 oz) diced tomatoes with green chilies (Rotel)
  • 1/2 cup sour cream
  • 1 cup shredded cheddar cheese, divided
  • 1 1/2 cups crushed Doritos

Optional Ingredients

  • 1/2 cup onion, finely chopped
  • 1 cup shredded lettuce (for topping)
  • 1/2 cup diced tomatoes (for topping)

Instructions

  1. Preheat the Oven: Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish with non-stick spray to ensure the casserole won’t stick.
  2. Cook the Ground Beef: In a large skillet over medium heat, cook the ground beef until it is browned, breaking it apart with a spatula. Drain any excess fat to keep the dish from being greasy.
  3. Add Seasoning and Tomatoes: Stir in the taco seasoning mix and the can of diced tomatoes with green chilies. Let it simmer gently for about 5 minutes to blend the flavors well. Remove from heat afterward.
  4. Layer the Casserole: Spread the crushed Doritos evenly in the bottom of the prepared baking dish. Add half of the cooked beef mixture over the chips, followed by half of the shredded cheddar cheese.
  5. Add the Sour Cream and Remaining Layers: Spread sour cream evenly over the beef and cheese layer. Then add the remaining beef mixture on top, and finish with the remaining shredded cheddar cheese.
  6. Bake: Place the casserole in the preheated oven and bake for 20-25 minutes, or until the cheese on top is melted and bubbly.
  7. Garnish and Serve: If you like, top with shredded lettuce and diced tomatoes before serving for a fresh crunch. Serve hot and enjoy your hearty Dorito Casserole!

Notes

  • You can add finely chopped onion while cooking the beef for additional flavor.
  • Substitute ground turkey for a leaner protein option.
  • For a spicier casserole, use hot Rotel tomatoes or add diced jalapeños.
  • Leftovers keep well in the refrigerator for up to 3 days and reheat nicely in the oven or microwave.
  • Adding a layer of black beans or corn can boost the nutrition and texture.
