Description

This recipe recreates the iconic spicy wonton sauce from Din Tai Fung, perfect for adding a flavorful kick to your homemade dumplings or noodles.

Ingredients

Sauce:

  • 3 tablespoons soy sauce
  • 2 tablespoons Chinese black vinegar
  • 2 tablespoons chili oil with flakes
  • 1 tablespoon sesame oil
  • 1 teaspoon sugar
  • 1 teaspoon minced garlic
  • 1 teaspoon grated fresh ginger
  • 1 green onion finely chopped
  • 1/2 teaspoon Sichuan peppercorn powder (optional)

Instructions

  1. Prepare the Sauce: In a small bowl, whisk together soy sauce, black vinegar, chili oil, sesame oil, sugar, garlic, ginger, and Sichuan peppercorn powder until sugar dissolves.
  2. Adjust Seasoning: Stir in green onion and adjust seasoning to achieve a balance of salty, tangy, spicy, and savory flavors.
  3. Serve: Drizzle the sauce generously over freshly boiled wontons or noodles, tossing gently to coat.

Notes

  • This versatile sauce can also complement noodles or dumplings.
  • Adjust the amount of chili oil according to your heat preference.
  • For a smoother texture, strain out chili flakes before serving.
  • Store the sauce in an airtight jar in the refrigerator for up to 1 week.
