Description

This Dill Pickle Chicken Salad is a tangy and flavorful twist on traditional chicken salad. Packed with dill pickles, fresh herbs, and a creamy dressing, it’s perfect for sandwiches, lettuce wraps, or enjoying on its own.

Ingredients

Chicken Salad:

  • 3 cups cooked chicken breast (shredded or chopped)
  • ½ cup chopped dill pickles
  • ¼ cup chopped celery
  • 2 tbsp finely diced red onion
  • Salt and black pepper to taste

Dressing:

  • â…“ cup mayonnaise
  • 2 tbsp pickle juice
  • 1 tbsp Dijon mustard
  • 2 tbsp chopped fresh dill (or 1 tsp dried)

Instructions

  1. Prepare Chicken Salad: In a large bowl, combine the chopped chicken, dill pickles, celery, and red onion.
  2. Make Dressing: In a small bowl, whisk together the mayonnaise, pickle juice, Dijon mustard, and chopped dill until smooth.
  3. Combine: Pour the dressing over the chicken mixture and stir until well combined. Season with salt and pepper.
  4. Chill: Refrigerate for at least 20–30 minutes before serving to allow flavors to meld.
  5. Serve: Enjoy in lettuce wraps, sandwiches, with crackers, or over greens.

Notes

  • For extra tang, consider adding lemon juice or hot sauce.
  • Rotisserie chicken works well for convenience.
  • This salad can be stored in the fridge for up to 3 days.
