Description

Derby Pie is a classic American dessert featuring a rich blend of semi-sweet chocolate chips and crunchy pecans baked into a gooey, buttery filling inside a flaky pie crust. Originating from Kentucky, this decadent pie is perfect for celebrations or any occasion that calls for a crowd-pleasing treat.

Ingredients

Pie Crust

  • 1 unbaked 9-inch pie crust

Filling

  • 1 cup semi-sweet chocolate chips
  • 1 cup chopped pecans
  • 1 cup packed brown sugar
  • 2 large eggs
  • 1/4 cup unsalted butter, melted
  • 1 tbsp all-purpose flour
  • 1 tbsp vanilla extract
  • 1/4 tsp salt

Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C) to ensure it’s at the perfect temperature for baking the pie.
  2. Mix Wet Ingredients: In a large bowl, whisk together the eggs, brown sugar, melted butter, flour, vanilla extract, and salt until the mixture is smooth and well combined.
  3. Add Chocolate and Pecans: Gently fold in the semi-sweet chocolate chips and chopped pecans to evenly distribute them through the filling.
  4. Fill Pie Crust: Pour the prepared filling mixture into the unbaked 9-inch pie crust, spreading it out evenly.
  5. Bake the Pie: Place the pie in the preheated oven and bake for 45-50 minutes. The filling should be set but remain slightly jiggly in the center when done.
  6. Cool the Pie: Remove the pie from the oven and allow it to cool completely to help the filling set properly before slicing.
  7. Serve: Slice and serve the Derby Pie as is or top with whipped cream or vanilla ice cream for extra indulgence.

Notes

  • The pie filling should be slightly jiggly in the center after baking; it will firm up as it cools.
  • Using freshly chopped pecans enhances the flavor and texture.
  • For a crispier crust, you can pre-bake the pie crust for 5-7 minutes before adding the filling.
  • Store leftovers covered at room temperature for up to 2 days or refrigerated for up to 5 days.
  • Reheat slices in a microwave for about 20 seconds if desired.
