Ingredients

Main Ingredients:

  • 12 ounces spaghetti or linguine
  • 3 tablespoons unsalted butter
  • 1 tablespoon olive oil
  • 1 small onion, finely diced
  • 2 cloves garlic, minced
  • 8 ounces cremini mushrooms, sliced
  • 3 cups cooked chicken breast, shredded

Sauce and Cheese:

  • 1 can (10.5 ounces) cream of chicken soup
  • 1 can (10.5 ounces) cream of mushroom soup
  • 1 cup sour cream
  • 1 cup chicken broth
  • 1/2 cup heavy cream
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon nutmeg
  • 1 1/2 cups shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1 cup shredded cheddar cheese

Topping:

  • 1/2 cup breadcrumbs
  • 2 tablespoons chopped parsley for garnish

Instructions

  1. Preheat Oven: Preheat oven to 350°F and grease a 9×13-inch baking dish.
  2. Cook Pasta: Cook the pasta according to package directions until al dente, then drain and set aside.
  3. Sauté Onion and Mushrooms: In a large skillet, melt butter with olive oil over medium heat. Add the onion and cook until softened. Stir in garlic and mushrooms, cook until tender.
  4. Prepare Sauce: In a large mixing bowl, combine chicken, cream of chicken soup, cream of mushroom soup, sour cream, chicken broth, heavy cream, salt, pepper, garlic powder, and nutmeg. Add sautéed onion and mushrooms, mix well.
  5. Combine Ingredients: Stir in cooked pasta until coated, then fold in mozzarella and Parmesan cheese. Transfer to baking dish.
  6. Add Cheese and Bake: Sprinkle remaining mozzarella and cheddar cheese on top, then breadcrumbs. Bake for 35-40 minutes until bubbly and golden. Rest for 10 minutes before serving. Garnish with parsley.
