Ingredients
Puff Pastry:
- 1 sheet puff pastry (thawed)
Cream Cheese Filling:
- 4 oz cream cheese (softened)
- 2 tablespoons granulated sugar
- 1/2 teaspoon vanilla extract
Additional:
- 1/2 cup fresh raspberries
- 1 egg (beaten, for egg wash)
- powdered sugar for dusting
Instructions
- Preheat the oven: Preheat the oven to 375°F and line a baking sheet with parchment paper.
- Prepare the filling: In a small bowl, mix the cream cheese, sugar, and vanilla extract until smooth.
- Assemble the bites: Unfold the puff pastry sheet, cut it into squares, place cream cheese mixture and raspberries on each square, fold the corners, and seal. Brush with egg wash.
- Bake: Bake for 15–18 minutes until golden and puffed.
- Serve: Let cool slightly, then dust with powdered sugar before serving.

- You can use frozen raspberries—just thaw and drain them first.
