Description

This Deliciously Cheesy Enchiladas Bake is a comforting and flavorful Mexican-inspired dish that is perfect for a family dinner. Filled with tender shredded chicken, gooey cheese, and a blend of spices, these enchiladas are baked to bubbly perfection and topped with a generous amount of cheese.


Ingredients

For the Enchiladas:

  • 8 flour tortillas (8-inch size)
  • 2 cups cooked shredded chicken
  • 2 cups shredded Mexican blend cheese, divided
  • 1 can (10 oz) red enchilada sauce
  • 1/2 cup sour cream
  • 1/2 cup diced onions
  • 1 tsp ground cumin
  • 1/2 tsp garlic powder
  • 1/2 tsp chili powder
  • Salt and pepper to taste
  • 2 tbsp chopped fresh cilantro (optional)


Instructions

  1. Preheat the oven: Preheat the oven to 375°F and lightly grease a 9×13-inch baking dish.
  2. Mix the filling: In a large bowl, combine the shredded chicken, 1 cup of cheese, diced onions, sour cream, cumin, garlic powder, chili powder, salt, and pepper.
