Description

A healthy and delicious cauliflower rice bowl packed with veggies, protein, and flavorful seasonings. Perfect for a low-carb, gluten-free meal.


Ingredients

  • 1 medium head of cauliflower, grated or pulsed into rice-sized pieces
  • 1 tablespoon olive oil
  • 1/2 onion, diced
  • 2 cloves garlic, minced
  • 1 bell pepper, chopped
  • 1 cup cooked black beans
  • 1 cup corn kernels (fresh or frozen)
  • 1/2 teaspoon cumin
  • 1/2 teaspoon smoked paprika
  • Salt and pepper to taste
  • 1 avocado, sliced
  • 1/4 cup chopped fresh cilantro
  • Juice of 1 lime

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add diced onion and garlic, sauté for 2–3 minutes until fragrant.
  3. Add bell pepper and cook for another 3–4 minutes.
  4. Stir in the cauliflower rice and cook for 5–7 minutes, stirring occasionally, until tender.
  5. Add black beans, corn, cumin, paprika, salt, and pepper. Stir to combine and heat through for 3–4 minutes.
  6. Remove from heat and mix in fresh lime juice and chopped cilantro.
  7. Serve in bowls topped with avocado slices.

Notes

  • You can add grilled chicken or tofu for extra protein.
  • Top with your favorite salsa or hot sauce for added flavor.
  • Store leftovers in an airtight container in the fridge for up to 3 days.
