Description

Indulge in the delightful flavors of this Raspberry Tiramisu, a no-bake twist on the classic Italian dessert. Layers of espresso-soaked ladyfingers, creamy mascarpone, fresh raspberries, and a hint of raspberry liqueur create a heavenly treat perfect for any occasion.


Ingredients

Filling:

  • 1 1/2 cups fresh raspberries (plus extra for garnish)
  • 1/2 cup raspberry preserves
  • 1/4 cup raspberry liqueur or orange juice
  • 1 cup heavy cream
  • 8 oz mascarpone cheese, softened
  • 1/3 cup powdered sugar
  • 1 tsp vanilla extract

Assembly:

  • 24 ladyfinger cookies (savoiardi)
  • 1/2 cup brewed espresso or strong coffee, cooled
  • 1 tbsp unsweetened cocoa powder (for dusting)
  • fresh mint, for garnish (optional)

Instructions

  1. Mix Raspberry Preserves: In a small bowl, mix raspberry preserves with raspberry liqueur or orange juice.
  2. Whip Cream: Beat heavy cream until soft peaks form.
  3. Prepare Mascarpone Filling: Combine mascarpone, powdered sugar, and vanilla extract until smooth. Fold in the whipped cream.
  4. Assemble: Dip ladyfingers in espresso, layer with raspberry mixture, mascarpone, and raspberries. Repeat layers. Refrigerate for at least 4 hours.
  5. Serve: Dust with cocoa powder and garnish with raspberries and mint before serving.

Notes

  • This dessert can be made up to 2 days in advance for best flavor.
