Description

The Delectable Rachel Sandwich is a savory grilled sandwich featuring tender turkey breast, melty Swiss cheese, crunchy coleslaw, and tangy Russian dressing layered between slices of rye or marble rye bread. Perfect for a satisfying lunch or casual dinner, this sandwich offers a delicious twist on a classic Reuben by swapping out corned beef for turkey and adding creamy coleslaw for extra texture.

Ingredients

Bread and Spread

  • 8 slices rye or marble rye bread
  • 1/2 cup Russian dressing or Thousand Island dressing

Filling

  • 1 lb sliced deli turkey breast
  • 1 cup coleslaw (homemade or store-bought)
  • 8 slices Swiss cheese

For Grilling

  • 2 tablespoons butter, softened

Instructions

  1. Prepare the bread: Lay out the slices of rye or marble rye bread on a clean surface. Spread Russian dressing evenly on one side of each slice to ensure every bite is flavorful.
  2. Assemble the sandwiches: Take 4 of the bread slices, dressing side up, and layer each with turkey breast slices, followed by a scoop of coleslaw, and then 2 slices of Swiss cheese. Top with the remaining bread slices dressing side down to complete each sandwich.
  3. Heat the skillet: Place a large skillet or griddle over medium heat to warm it evenly before grilling.
  4. Butter the sandwiches: Spread softened butter on the outside of each sandwich evenly. This will help achieve that golden, crispy exterior.
  5. Grill the sandwiches: Place the sandwiches in the heated skillet. Grill for 3 to 4 minutes per side, pressing gently with a spatula to help melt the cheese and crisp the bread. The sandwiches are ready when the bread is golden brown and the cheese has melted.
  6. Serve warm: Remove the sandwiches from the skillet, slice each in half if desired, and serve immediately while warm and melty.

Notes

  • For extra crunch, drain any excess liquid from the coleslaw before adding it to the sandwich to avoid soggy bread.
  • You can swap turkey for pastrami or corned beef to make a classic Reuben sandwich variation.
  • Make sure the skillet is adequately heated before grilling to prevent sticking and achieve even browning.
  • Use softened butter for easier spreading and better coverage on the sandwich exterior.
