Instructions
- Prepare the Filling: In a bowl, combine chopped pecans, light corn syrup, brown sugar, melted butter, vanilla extract, and a pinch of salt. Mix thoroughly until all ingredients are well combined, ensuring a sticky, rich filling.
- Cut the Dough: Unroll the refrigerated pie crusts on a clean surface. Using a round cutter about 4 inches in diameter, cut out circles from the dough evenly to prepare the mini pie bases.
- Assemble the Pies: Place approximately 1 tablespoon of the pecan filling in the center of each dough circle. Fold the dough over to form a half-moon shape and press the edges firmly together. Use a fork to crimp the edges to seal tightly and prevent leakage during frying.
