Description

These Decadent Strawberry Cheesecake Quesadillas combine the creamy sweetness of strawberry-infused cream cheese with the warm, crispy texture of golden-buttered tortillas. Perfect as a quick dessert or indulgent snack, they are served with a luscious strawberry sauce for dipping, creating a delightful treat in just 16 minutes.

Ingredients

Filling

  • 1/2 cup cream cheese, softened
  • 2 tbsp sugar
  • 1/2 tsp vanilla extract
  • 1/2 cup strawberries, diced

Tortillas

  • 4 tortillas, 6-inch
  • 2 tbsp butter, softened
  • 1 tsp sugar
  • 1/2 tsp cinnamon

To Serve

  • Strawberry sauce for dipping

Instructions

  1. Prepare the filling: In a mixing bowl, beat the softened cream cheese, sugar, and vanilla extract until smooth and creamy. Gently fold in the diced strawberries to evenly distribute the fruit without breaking them down.
  2. Assemble the quesadilla: Spread half of the strawberry cream cheese mixture evenly onto one tortilla, ensuring full coverage but leaving some space at the edges.
  3. Heat the pan and cook first side: Heat 1 teaspoon of butter in a pan over medium-high heat until melted and sizzling. Place the tortilla with the cream cheese side facing up into the pan.
  4. Top with second tortilla and butter: Spread 1 teaspoon of butter on one side of the second tortilla. Place the buttered side facing up on top of the first tortilla, creating a sandwich.
  5. Cook until golden brown: Cook the quesadilla for 2-3 minutes on one side until the bottom is golden and crispy. Carefully flip and cook the other side for another 2-3 minutes to ensure both sides are perfectly browned and the filling is warmed through.
  6. Add cinnamon sugar: Mix the cinnamon and sugar together, then sprinkle this mixture evenly on top of the cooked quesadilla to add a sweet, spiced finish.
  7. Repeat and rest: Repeat the entire process for the second quesadilla. Once cooked, let the quesadillas sit for 2 minutes to set before slicing them into wedges.
  8. Serve: Serve the warm quesadillas with strawberry sauce on the side for dipping, enhancing the fruity and creamy flavors.

Notes

  • Use fresh strawberries for the best flavor and texture in the filling.
  • Be gentle when folding the strawberries into the cream cheese to maintain the pieces intact.
  • Adjust the cooking heat as needed to prevent burning the tortillas while allowing the filling to warm through properly.
  • For a healthier option, use low-fat cream cheese and less butter.
  • You can substitute strawberry sauce with any berry or fruit sauce of your choice.
