Description

This Decadent Black Forest Cheesecake combines a rich chocolate crust, creamy cocoa-infused cheesecake filling, and a luscious cherry topping reminiscent of the classic Black Forest cake. With a smooth chocolate ganache and delightful garnishes of fresh cherries, whipped cream, and chocolate shavings, this cheesecake offers a perfect balance of chocolate and fruit flavors ideal for any special occasion.

Ingredients

Crust

  • 1 1/2 cups chocolate graham cracker crumbs (or Oreo cookie crumbs)
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter, melted

Cheesecake Filling

  • 3 (8-ounce) packages cream cheese, softened
  • 1 cup granulated sugar
  • 1/2 cup unsweetened cocoa powder
  • 3 large eggs
  • 1/2 cup sour cream
  • 1/2 tsp vanilla extract
  • 1 cup semi-sweet chocolate chips, melted and cooled slightly

Ganache

  • 1/2 cup heavy cream
  • 1 cup semi-sweet chocolate chips

Topping and Garnish

  • 1 (21-ounce) can cherry pie filling
  • Fresh cherries or maraschino cherries
  • Whipped cream
  • Chocolate shavings

Instructions

  1. Prepare the Crust: Preheat your oven to 325°F (160°C) and grease a 9-inch springform pan. In a medium bowl, mix together the chocolate graham cracker crumbs, granulated sugar, and melted butter until well combined. Press the mixture firmly into the bottom of the springform pan to form an even crust. Bake for 10 minutes to set, then remove from the oven and allow to cool.
  2. Make the Chocolate Cheesecake Filling: Using a mixer, beat the softened cream cheese until smooth and creamy. Gradually add the sugar and cocoa powder, mixing thoroughly to combine. Add the eggs one at a time on low speed, ensuring each is fully incorporated before adding the next. Stir in the sour cream and vanilla extract, then gently fold in the melted semi-sweet chocolate chips. Pour this rich chocolate filling evenly over the cooled crust.
  3. Bake the Cheesecake: Place the springform pan inside a larger baking dish and pour hot water into the larger dish to create a water bath, which helps prevent cracking. Bake the cheesecake at 325°F (160°C) for 55-60 minutes until the edges are set but the center still jiggles slightly when gently shaken. Once baked, turn off the oven and leave the cheesecake inside for 1 hour to cool gradually and prevent cracking. After this, refrigerate for at least 4 hours or preferably overnight to ensure it sets properly.
  4. Prepare the Ganache: Heat the heavy cream in a small saucepan until it just begins to simmer. Pour the hot cream over the chocolate chips in a heatproof bowl and let sit for 2-3 minutes. Stir gently until the mixture is smooth and glossy. Allow the ganache to cool slightly before using.
  5. Add Cherry Topping and Garnish: Once the cheesecake is fully chilled and the ganache has cooled to a pourable consistency, spread the cherry pie filling evenly over the top. Decorate the cheesecake with fresh or maraschino cherries, dollops of whipped cream, and a generous sprinkle of chocolate shavings for an elegant and delicious finish.
  6. Serve: Carefully remove the sides of the springform pan. Slice the cheesecake using a warm, clean knife to ensure smooth cuts. Serve and enjoy this decadent Black Forest inspired dessert!

Notes

  • Using the water bath during baking helps to prevent cracks in the cheesecake.
  • Allow the cheesecake to chill thoroughly for best texture; overnight refrigeration is ideal.
  • Melted chocolate chips folded into the filling add extra chocolate richness and texture.
  • Choose good quality semi-sweet chocolate for both the filling and ganache for optimal flavor.
  • To make slicing easier, dip your knife in hot water and wipe it dry between cuts.
  • The cherry pie filling can be substituted with fresh cherry compote if desired.
