Ingredients
Ganache
- 1/2 cup heavy cream (or coconut cream for a dairy-free option)
- 1 tablespoon instant coffee or espresso powder
- 1 cup dark chocolate chips or chopped dark chocolate
- 1/2 teaspoon vanilla extract
Coating
- Unsweetened cocoa powder or finely ground coffee, for coating
Instructions
- Heat the Cream and Dissolve Coffee: In a small saucepan, heat the heavy cream over medium heat until it begins to simmer. Remove from heat and stir in the instant coffee or espresso powder until fully dissolved, creating a coffee-infused cream base.
- Make the Ganache: Place the dark chocolate in a heatproof bowl. Pour the hot coffee-infused cream over the chocolate and let it sit for 1-2 minutes to soften. Stir gently until the mixture is smooth and glossy, then stir in the vanilla extract for added flavor.
- Chill the Mixture: Cover the bowl with plastic wrap or a lid and refrigerate the ganache for 1-2 hours, or until it is firm enough to scoop and shape.
- Scoop and Shape Truffles: Using a small spoon or melon baller, scoop the chilled ganache into approximately 1-inch balls, handling gently to keep the shape smooth.
- Coat the Truffles: Roll each truffle in unsweetened cocoa powder or finely ground coffee to evenly coat, then place them on a parchment-lined baking sheet.
- Chill and Store: Place the coated truffles back into the refrigerator until firm. Serve chilled or store in an airtight container in the refrigerator for up to a week.
Notes
- For a dairy-free version, substitute heavy cream with coconut cream.
- Use quality dark chocolate with at least 60% cocoa for best flavor.
- Store truffles in a sealed container in the refrigerator for up to 7 days.
- Let truffles sit at room temperature for 10 minutes before serving for softer texture.
- You can also roll truffles in chopped nuts or shredded coconut for variety.
