Description

Indulge in the decadent combination of rich dark chocolate and tangy blackberries with this luscious Dark Chocolate Blackberry Cheesecake. Creamy and luxurious, this dessert is sure to impress any crowd.


Ingredients

For the crust:

  • 1 1/2 cups chocolate cookie crumbs
  • 1/4 cup granulated sugar
  • 1/3 cup unsalted butter, melted

For the filling:

  • 16 ounces cream cheese, softened
  • 1/2 cup granulated sugar
  • 1/2 cup sour cream
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 6 ounces dark chocolate, melted and slightly cooled
  • 1/2 cup blackberry puree (strained of seeds)

For the topping:

  • 1/2 cup blackberry jam
  • fresh blackberries for garnish (optional)
  • dark chocolate shavings (optional)

Instructions

  1. Preheat the oven and prepare the crust: Preheat the oven to 325°F (160°C). Lightly grease a 9-inch springform pan. Mix chocolate cookie crumbs, sugar, and melted butter. Press into the pan and bake.
  2. Prepare the filling: Beat cream cheese and sugar until smooth. Add sour cream, eggs, and vanilla. Stir in melted dark chocolate. Gently fold in blackberry puree.
  3. Bake the cheesecake: Pour the filling over the crust and bake until just set. Let cool, then refrigerate.
  4. Add the topping: Warm blackberry jam and spread over the top of the cheesecake. Garnish with fresh blackberries and dark chocolate shavings.

Notes

  • To make blackberry puree, blend fresh or thawed frozen blackberries and strain to remove seeds.
  • The cheesecake is best made a day ahead to allow full setting and flavor development.
