Ingredients
Cupcakes:
- 1 box yellow cake mix (plus ingredients listed on the box)
Vanilla Pudding Filling:
- 1 (3.4 oz) package instant vanilla pudding mix
- 2 cups cold milk
Chocolate Ganache:
- 1 cup heavy cream
- 1 cup semisweet chocolate chips
- 2 tablespoons corn syrup
- 2 tablespoons unsalted butter
Instructions
- Preheat Oven: Preheat the oven to 350°F (175°C) and line a muffin tin with cupcake liners.
- Prepare Cupcakes: Prepare the yellow cake mix according to package directions, fill cupcake liners 2/3 full, and bake for 18-20 minutes until a toothpick comes out clean. Let cool.
- Make Pudding: Whisk pudding mix and milk until thickened, then refrigerate.
- Create Ganache: Heat cream until simmering, pour over chocolate chips, add corn syrup and butter. Stir until smooth.
- Fill Cupcakes: Cut a hole in each cupcake, fill with pudding.
- Top with Ganache: Spoon ganache over cupcakes, letting it drip down the sides. Chill before serving.
