Description

Indulge in these delightful Daddy’s Boston Cream Cupcakes, featuring moist yellow cake filled with creamy vanilla pudding and topped with a rich chocolate ganache. These decadent treats are perfect for any occasion!


Ingredients

Cupcakes:

  • 1 box yellow cake mix (plus ingredients listed on the box)

Vanilla Pudding Filling:

  • 1 (3.4 oz) package instant vanilla pudding mix
  • 2 cups cold milk

Chocolate Ganache:

  • 1 cup heavy cream
  • 1 cup semisweet chocolate chips
  • 2 tablespoons corn syrup
  • 2 tablespoons unsalted butter


Instructions

  1. Preheat Oven: Preheat the oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. Prepare Cupcakes: Prepare the yellow cake mix according to package directions, fill cupcake liners 2/3 full, and bake for 18-20 minutes until a toothpick comes out clean. Let cool.
  3. Make Pudding: Whisk pudding mix and milk until thickened, then refrigerate.
  4. Create Ganache: Heat cream until simmering, pour over chocolate chips, add corn syrup and butter. Stir until smooth.
  5. Fill Cupcakes: Cut a hole in each cupcake, fill with pudding.
