Description

Ingredients

Cucumber Bites:

  • 2 large cucumbers

Cheese Filling:

  • 4 oz cream cheese (softened)
  • 2 oz goat cheese or feta cheese (crumbled)
  • 1 tablespoon fresh dill (chopped)
  • 1 teaspoon lemon juice
  • Salt and black pepper to taste

Savory Toppings:

  • ¼ cup cherry tomatoes (halved)
  • ¼ cup sliced olives
  • 2 tablespoons chopped red onion
  • 1 tablespoon capers (optional)

Instructions

  1. Slice the cucumbers: Cut the cucumbers into ½-inch thick rounds. Scoop out a shallow indentation in the center of each slice to create a cup.
