Description

Refreshing and hydrating Cucumber Agua Fresca, a light Mexican-inspired beverage made with fresh cucumber, lime juice, and natural sweetener, perfect for hot days or as a healthy, low-calorie drink option.

Ingredients

Ingredients

  • 1 large cucumber, peeled and chopped
  • 2 tablespoons fresh lime juice
  • 2 tablespoons agave syrup or sugar (adjust to taste)
  • 4 cups cold water
  • Ice cubes
  • Fresh mint leaves (optional, for garnish)
  • Extra lime wedges (optional, for garnish)

Instructions

  1. Prepare Ingredients: Peel and chop the large cucumber into pieces manageable for blending. Measure out fresh lime juice, agave syrup or sugar, and cold water to have all ingredients ready.
  2. Blend Mixture: Place the chopped cucumber, lime juice, agave syrup (or sugar), and cold water into a blender. Blend on high speed until the mixture is smooth, approximately 30 to 60 seconds.
  3. Strain Liquid: Pour the blended mixture through a fine mesh sieve or cheesecloth into a large pitcher to remove cucumber pulp, if a smooth texture is preferred. Use a spatula or spoon to press the pulp gently to extract more liquid.
  4. Adjust Sweetness: Stir the strained agua fresca well and taste. Add additional agave syrup or sugar if a sweeter flavor is desired and stir until dissolved.
  5. Serve and Garnish: Serve the chilled cucumber agua fresca over ice cubes. Garnish each glass with fresh mint leaves and lime wedges for an extra burst of freshness and visual appeal.

Notes

  • For a lighter version, reduce or omit the sweetener.
  • Make sure to peel the cucumber to avoid bitterness from the skin.
  • The straining step is optional but recommended for a silky smooth drink.
  • Use fresh lime juice for best flavor; bottled lime juice can alter the taste.
  • To make it vegan-friendly, use agave syrup instead of honey.
  • Can be prepared ahead and refrigerated for up to 2 days; stir well before serving.
