Ingredients
Taco Filling
- 1 lb lean ground beef, browned and drained
- 1 envelope (3 tablespoons) taco seasoning
- 1 (10-oz) can Ro-Tel Diced Tomatoes and Green Chiles, drained
- 1 1/2 cups sharp cheddar cheese, shredded (or Mexican blend)
Taco Cups
- 24 wonton wrappers
- Nonstick cooking spray for muffin tin
Instructions
- Preheat Oven: Preheat your oven to 375°F (190°C) and lightly coat a standard 12-cup muffin tin with nonstick cooking spray to prevent sticking.
- Prepare Filling: In a medium bowl, combine the browned and drained ground beef with the taco seasoning and drained diced tomatoes and green chiles. Mix well to evenly distribute the flavors.
- Assemble Taco Cups: Line each muffin cup with a wonton wrapper, pressing gently to fit. Add a spoonful of the taco mixture followed by a sprinkle of shredded cheese, then add another wonton wrapper layer, more taco mixture, and finish with a top layer of shredded cheese for a delicious cheesy crust.
- Bake: Place the muffin tin in the preheated oven and bake for 11-13 minutes until the wonton wrappers are golden brown, crispy, and the cheese inside is melted and bubbly.
Notes
- For a vegetarian version, substitute the ground beef with cooked black beans or a plant-based meat alternative.
- Use Mexican blend cheese for a more complex flavor.
- Make sure to drain the Rou-Tel tomatoes well to avoid soggy cups.
- These taco cups can be prepared ahead and baked just before serving for convenience.
- Serve with salsa, sour cream, or guacamole for extra flavor.
