Ingredients
For the Roasted Carrots:
- 1 pound carrots (peeled and cut into sticks)
- 2 tablespoons olive oil
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup grated Parmesan cheese
For the Salsa Verde:
- 1/2 cup fresh parsley
- 1/4 cup fresh cilantro
- 1 tablespoon capers
- 1 garlic clove
- 2 tablespoons lemon juice
- 1/4 cup olive oil
- Pinch of red pepper flakes (optional)
Instructions
- Preheat the oven: Preheat the oven to 425°F.
- Prepare the carrots: Toss the carrot sticks with 2 tablespoons of olive oil, salt, and pepper. Spread them on a baking sheet and roast for 20–25 minutes.
- Add Parmesan: Sprinkle the hot roasted carrots with Parmesan cheese.
- Make the salsa verde: Combine parsley, cilantro, capers, garlic, lemon juice, olive oil, and red pepper flakes in a food processor and pulse until blended.
- Serve: Drizzle the salsa verde over the warm roasted carrots or serve it on the side for dipping.
Notes
- You can substitute fresh dill or basil for the cilantro if desired.
