Description
A refreshing and crunchy cucumber salad enhanced with crispy beef bacon, tangy feta cheese, and a light apple cider vinegar dressing. Perfect for a quick, flavorful side dish or a light lunch.
Ingredients
Salad Ingredients
- 2 large cucumbers
- 1/2 red onion
- 1/4 cup cherry tomatoes
- 1/4 cup crumbled feta cheese
- Fresh herbs for garnish
Cooking Ingredients
- 4 strips of beef bacon
Dressing Ingredients
- 2 tbsp olive oil
- 1 tbsp apple cider vinegar
- Salt and pepper to taste
Instructions
- Cook the Beef Bacon: Heat a skillet over medium heat and cook the beef bacon strips until crispy, about 5 to 7 minutes. Once cooked, transfer them to a paper towel-lined plate to drain excess fat.
- Prepare the Vegetables: Wash and thinly slice the cucumbers, thinly slice the red onion, and halve the cherry tomatoes. Place all these prepared vegetables into a large mixing bowl.
- Combine Salad Ingredients: Chop the cooked bacon into bite-sized pieces and add them to the bowl with the vegetables. Add crumbled feta cheese and your choice of fresh herbs on top.
- Make the Dressing: In a small bowl, whisk together the olive oil, apple cider vinegar, salt, and pepper until well combined.
- Toss and Serve: Pour the dressing over the salad and toss gently to combine all ingredients evenly. Serve immediately to enjoy the fresh crunch and crispy bacon flavors.
Notes
- Use fresh herbs like parsley, dill, or basil for the best flavor.
- Adjust salt and pepper in the dressing according to your taste.
- For a vegetarian version, omit the bacon and add more feta or nuts for texture.
- This salad is best served fresh to maintain the crispness of cucumbers and bacon.
- Beef bacon can be substituted with turkey bacon if preferred.
