Description

This Crunchy Asian Sesame Chicken Salad is a delightful blend of flavors and textures, with a colorful mix of veggies, tender chicken, and a zesty sesame dressing. The crunchy toppings add a satisfying finish to this refreshing salad.

Ingredients

Main Salad Ingredients:

  • 2 cups cooked chicken breast (shredded or chopped)
  • 4 cups shredded green cabbage
  • 1 cup shredded red cabbage
  • 1 cup shredded carrots
  • 1 red bell pepper (thinly sliced)
  • 2 green onions (sliced)
  • 1/4 cup fresh cilantro (chopped)

Additional Toppings:

  • 1/2 cup crispy chow mein noodles
  • 1/4 cup sliced almonds (toasted)
  • 1 tablespoon sesame seeds

For the dressing:

  • 1/4 cup rice vinegar
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 2 tablespoons honey or maple syrup
  • 1 tablespoon lime juice
  • 1 teaspoon fresh ginger (grated)
  • 1 clove garlic (minced)
  • Salt and pepper to taste

Instructions

  1. Main Salad Preparation: In a large bowl, combine the chicken, green and red cabbage, carrots, bell pepper, green onions, and cilantro.
  2. Dressing: In a small bowl or jar, whisk together all dressing ingredients until well blended.
  3. Toss: Pour the dressing over the salad and toss to coat evenly.
  4. Add Toppings: Just before serving, sprinkle with chow mein noodles, toasted almonds, and sesame seeds for crunch.
  5. Serve: Serve chilled or at room temperature.

Notes

  • For a vegetarian version, omit the chicken or use crispy tofu.
  • You can prep the salad and dressing ahead of time—just store them separately and toss before serving to keep it crisp.
