Ingredients
For the Spread:
- 2 tablespoons Dijon mustard
- 2 tablespoons salted butter
- 2 tablespoons honey
For the Sandwiches:
- 4 large croissants
- 8 slices cheese (Gouda, baby Swiss, cheddar, or your favorite)
- ½ pound deli-sliced ham
- 8 slices cooked bacon
For the Eggs:
- 5 large eggs
- Splash of milk
- Salt and pepper, to taste
- 1 tablespoon butter
- Fresh chives (optional, for garnish)
Instructions
- Make the Dijon Honey Spread: In a small bowl, whisk together the Dijon mustard, salted butter, and honey until smooth. Set aside to use later.
- Prepare the Eggs: In a separate bowl, whisk together the 5 large eggs with a splash of milk, and season with salt and pepper according to taste.
- Cook the Scrambled Eggs: Heat 1 tablespoon of butter in a non-stick skillet over medium heat. Once melted, pour in the egg mixture and cook gently, scrambling with a spatula until the eggs are just set but still moist. Remove from heat and set aside.
- Slice the Croissants: Carefully slice each croissant in half horizontally, being careful not to cut all the way through for better handling.
- Spread the Dijon Honey Blend: Generously spread the prepared Dijon honey mixture inside both halves of each croissant.
- Add Cheese: Place 2 slices of your choice of cheese on the bottom half of each croissant to create a delicious melty base.
- Layer the Ham and Bacon: Add several slices of deli-sliced ham followed by 2 slices of cooked bacon on top of the cheese for savory flavor and texture.
- Add the Scrambled Eggs: Spoon an even portion of the scrambled eggs over the ham and bacon, completing the layering of ingredients.
- Close the Sandwiches: Fold the croissants closed to form sandwiches, securing all the fillings inside.
- Toast the Sandwiches (Optional): For a crispy and golden finish with melted cheese, melt 1 tablespoon of butter in a skillet over medium heat. Place the assembled sandwiches in the skillet and toast for 2-3 minutes on each side until golden brown.
- Serve: Garnish with fresh chives if desired, and serve the croissant breakfast sandwiches hot for the best taste experience.
Notes
- Use your favorite cheese variety such as Gouda, baby Swiss, or cheddar to customize flavor.
- To make ahead, prepare the ingredients in advance and toast sandwiches just before serving.
- For a vegetarian version, omit the ham and bacon and add sautéed vegetables or avocado slices.
- Fresh chives add a nice herbal garnish but can be omitted if unavailable.
- The optional toasting step adds a crispy exterior and melted cheese but can be skipped if preferred.
