Ingredients
For the Spread:
- 2 tablespoons Dijon mustard
- 2 tablespoons salted butter
- 2 tablespoons honey
For the Sandwiches:
- 4 large croissants
- 8 slices of cheese (Gouda, baby Swiss, cheddar, or your favorite)
- ½ pound deli-sliced ham
- 8 slices cooked bacon
For the Eggs:
- 5 large eggs
- Splash of milk
- Salt and pepper (to taste)
- 1 tablespoon butter
- Fresh chives (optional, for garnish)
Instructions
- Make the Dijon Honey Spread: In a small bowl, whisk together the Dijon mustard, salted butter, and honey until smooth. Set aside.
- Prepare the Eggs: In a bowl, whisk together the 5 eggs, a splash of milk, salt, and pepper to taste.
- Cook the Scrambled Eggs: Heat 1 tablespoon of butter in a non-stick skillet over medium heat. Once the butter is melted, pour in the egg mixture. Gently scramble the eggs with a spatula, cooking until just set. Remove from the heat and set aside.
- Assemble the Sandwiches: Slice the croissants in half horizontally, but not completely through to keep them hinged.
- Spread the Dijon Honey Mixture: Spread a generous amount of the Dijon honey spread on the inside of each croissant half.
- Add Cheese: Place 2 slices of your chosen cheese on the bottom half of each croissant.
- Add Ham and Bacon: Layer a few slices of deli-sliced ham and 2 slices of cooked bacon on top of the cheese.
- Add Scrambled Eggs: Spoon a portion of the prepared scrambled eggs over the ham and bacon.
- Close the Sandwiches: Fold the croissants closed to form sandwiches.
- Toast the Sandwiches (Optional): For a crispy, golden finish, melt 1 tablespoon of butter in a skillet over medium heat. Place the assembled sandwiches in the skillet and cook 2-3 minutes per side until croissants are golden and cheese is melted.
- Serve: Garnish sandwiches with chopped fresh chives if desired, and serve hot for the best flavor and texture.
Notes
- Use your favorite cheese variety: Gouda, baby Swiss, or cheddar are excellent melty options.
- To save time, use pre-cooked bacon or cook bacon ahead of time.
- The Dijon honey spread can be prepared in advance and refrigerated.
- Optional toasting adds a delightful crunch but can be skipped for a softer sandwich.
- Fresh chives add a mild onion flavor, but can be omitted or substituted with green onions.
