Description

A sweet, savory, and effortlessly delicious dish of slow-cooked meatballs coated in pineapple barbecue sauce—perfect for parties, potlucks, or easy weeknight meals.

Ingredients

  • 1 (32 oz) bag frozen meatballs (beef, turkey, or plant-based)
  • 1 (20 oz) can pineapple chunks, drained (reserve juice)
  • 1 cup barbecue sauce (your favorite variety)
  • 1/2 cup reserved pineapple juice
  • 2 tbsp soy sauce
  • 1/2 tsp garlic powder
  • Optional: sliced green onions, for garnish
  • Optional: sesame seeds, for garnish

Instructions

  1. Lightly grease the inside of your crockpot with non-stick spray.
  2. Add frozen meatballs and drained pineapple chunks to the crockpot in an even layer.
  3. In a medium bowl, whisk together barbecue sauce, reserved pineapple juice, soy sauce, and garlic powder.
  4. Pour sauce over the meatballs and pineapple, stir gently to coat evenly.
  5. Cover and cook on low for 4 hours or on high for 2 hours until heated through and flavors meld.
  6. Just before serving, sprinkle with green onions and sesame seeds if desired.

Notes

  • For a spicier version, add a splash of hot sauce or use spicy barbecue sauce.
  • Serve over rice, noodles, or in sandwich rolls for a full meal.
  • Leftovers can be stored and frozen for future easy meals.
