Description

This Crockpot Meatloaf recipe is a convenient and delicious way to enjoy a classic comfort food dish without having to turn on the oven. The slow cooker helps the flavors meld together while keeping the meatloaf moist and tender. Perfect for busy weeknights or when you want a hands-off cooking experience.

Ingredients

For the Meatloaf:

  • 1 1/2 pounds ground beef
  • 1/2 cup breadcrumbs
  • 1/4 cup milk
  • 1/2 cup ketchup
  • 1/4 cup diced onion
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon dried oregano

For the Glaze:

  • 1/4 cup ketchup
  • 2 tablespoons brown sugar
  • 1 tablespoon mustard

Instructions

  1. Prepare the Meatloaf: In a large bowl, combine ground beef, breadcrumbs, milk, ketchup, onion, garlic powder, salt, pepper, and oregano. Mix until well combined.
  2. Shape the Meatloaf: Form the meat mixture into a loaf shape and place it in the slow cooker.
  3. Make the Glaze: In a small bowl, mix together ketchup, brown sugar, and mustard. Spread the glaze over the meatloaf.
  4. Cook: Cover the slow cooker and cook on low for 6-8 hours or on high for 3-4 hours, until the meatloaf is cooked through.
  5. Serve: Carefully remove the meatloaf from the slow cooker and let it rest for a few minutes before slicing. Serve hot and enjoy!

Notes

  • You can customize the meatloaf by adding diced bell peppers, shredded carrots, or your favorite seasonings.
  • Make sure to use lean ground beef to prevent the meatloaf from becoming too greasy.
  • Leftover meatloaf makes great sandwiches the next day!
