Description

Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 Tbsp olive oil (for searing)
  • Salt & freshly ground black pepper, to taste
  • 3 cloves garlic, minced
  • 1 cup chicken broth
  • 1 cup heavy cream
  • ½ cup grated Parmesan cheese
  • ⅓ cup sundried tomatoes, chopped
  • 1 tsp Italian seasoning
  • ¼ tsp crushed red pepper flakes (optional)
  • Fresh basil, chopped (for garnish)


Instructions

  1. Pat chicken dry; season with salt and pepper. Heat olive oil over medium‑high and sear chicken 2 min per side until golden. Transfer to crockpot.
  2. Add garlic, sundried tomatoes, Italian seasoning, and red pepper flakes over the chicken. Pour in chicken broth.
  3. Cook on LOW for 3–4 hours (or HIGH for ~2 hours) until chicken is fork‑tender.
  4. Remove chicken briefly. Stir heavy cream and Parmesan into crockpot until smooth; nestle chicken back in to warm through and thicken sauce.
  5. Garnish with chopped basil and extra Parmesan before serving.

Notes

  • Sear chicken first for color and flavor, but you can skip if short on time.
  • Swap in boneless, skinless chicken thighs for extra juiciness.
  • Dairy‑free option: use coconut cream and vegan Parmesan.
