Description

This Crockpot Jalapeño Popper Dip is a creamy, cheesy appetizer packed with spicy pickled jalapeños and crispy bacon. Perfectly melted and cooked low and slow in a crockpot, it’s an ideal crowd-pleaser for parties and gatherings. Serve warm with your favorite tortilla chips, crackers, or sliced baguette for a deliciously smooth and spicy dip experience.

Ingredients

Meat

  • 8 ounces bacon, cooked and crumbled

Dairy

  • 16 ounces cream cheese, softened and cubed
  • 1 cup sour cream
  • 2 cups shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese

Vegetables & Condiments

  • ½ cup diced pickled jalapeños, drained
  • ¼ cup jalapeño juice (from the jar)

Spices

  • 1 teaspoon garlic powder
  • ½ teaspoon onion powder

Instructions

  1. Cook the Bacon: Cook the bacon in a skillet over medium heat until it becomes crispy. Once done, remove it from the skillet, let it cool slightly, then crumble it into small pieces and set aside for garnish.
  2. Combine Dip Ingredients: In the slow cooker, add the softened cream cheese cubes, sour cream, shredded cheddar cheese, shredded Monterey Jack cheese, diced pickled jalapeños, jalapeño juice, garlic powder, and onion powder. Stir to combine all ingredients evenly.
  3. Cook the Dip: Cover the slow cooker with its lid and set to cook on low for 2 to 3 hours, or on high for 1 to 1½ hours. Stir occasionally to help melt and combine the cheeses and ingredients into a smooth, creamy dip.
  4. Add Bacon Topping: Once the dip is fully melted and creamy, sprinkle the crumbled bacon evenly over the top of the dip.
  5. Serve Warm: Serve the dip warm directly from the crockpot, accompanied by tortilla chips, crackers, or sliced baguette for dipping.

Notes

  • Make sure to drain the pickled jalapeños well to avoid making the dip too watery.
  • You can adjust the amount of jalapeños and jalapeño juice to control the spice level.
  • For a smokier flavor, use smoked cheddar cheese instead of regular cheddar.
  • This dip can be kept warm in the slow cooker on the ‘keep warm’ setting during parties.
  • If you don’t have a slow cooker, you can melt the ingredients on the stovetop over low heat while stirring frequently.
