- 1 ½ pounds ground beef
- 1 medium onion, diced
- 4 medium potatoes, peeled and thinly sliced
- 2 cups frozen mixed vegetables (corn, peas, and carrots)

- 1 (10.5-ounce) can cream of mushroom soup
- 1 cup shredded cheddar cheese
- 1/2 cup milk
- 1 teaspoon garlic powder
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- Cooking spray or oil for greasing slow cooker
Instructions
- Prepare Slow Cooker: Lightly grease the inside of your slow cooker with cooking spray or oil to prevent sticking during cooking.
- Brown Ground Beef and Onion: In a skillet over medium heat, cook the ground beef with the diced onion until fully browned and cooked through, about 6 to 8 minutes. Drain any excess fat to reduce greasiness.
- Mix Soup Base: In a small bowl, whisk together cream of mushroom soup, milk, garlic powder, salt, and black pepper until smooth and combined evenly.
- Layer Ingredients: Place half of the sliced potatoes at the bottom of the slow cooker. Spread half of the cooked ground beef mixture over the potatoes, then add half of the frozen mixed vegetables. Pour half of the soup mixture evenly over the layers. Repeat with the remaining potatoes, beef, vegetables, and soup mixture to build a second layer.
- Cook: Cover the slow cooker with its lid. Cook on low for 6 to 7 hours or on high for 3 to 4 hours, until the potatoes are tender and the casserole is hot throughout.
- Add Cheese: In the last 15 to 20 minutes of cooking, sprinkle the shredded cheddar cheese evenly on top of the casserole. Cover and allow the cheese to melt before serving.
Notes
- Substitute cream of mushroom soup with cream of chicken or cream of celery for different flavor variations.
- Add a dash of hot sauce or paprika to the soup mixture if you prefer a bit of heat.
- This casserole is freezer-friendly and can be prepared ahead of time for convenience.
