Ingredients
Chicken:
- 1 1/2 pounds boneless skinless chicken breasts
Beans:
- 1 can (15 oz) black beans (drained and rinsed)
Corn:
- 1 can (15 oz) corn (drained)
Tomatoes:
- 1 can (10 oz) Rotel diced tomatoes with green chilies (undrained)
Taco Seasoning:
- 1 packet taco seasoning
Cream Cheese:
- 8 oz cream cheese (cubed)
Chicken Broth:
- 1/2 cup chicken broth
Instructions
- Place the chicken in the crockpot: Add chicken breasts to the bottom of the crockpot.
- Add ingredients: Put black beans, corn, Rotel tomatoes, and taco seasoning on top of the chicken.
- Pour broth and add cream cheese: Pour chicken broth over the ingredients and top with cubed cream cheese.
- Cook: Cover and cook on low for 6–7 hours or high for 3–4 hours until chicken is tender.
- Shred chicken: Remove chicken, shred with forks, and return to the crockpot.
- Combine: Stir everything until creamy and well combined.
- Serve: Serve over rice, in tortillas, or with chips.
