Description

Crockpot Fiesta Chicken is a delicious and creamy Mexican-inspired dish made with tender shredded chicken, black beans, corn, and cream cheese. This easy slow cooker recipe is perfect for busy weeknights or feeding a crowd.


Ingredients

Chicken:

  • 1 1/2 pounds boneless skinless chicken breasts

Beans:

  • 1 can (15 oz) black beans (drained and rinsed)

Corn:

  • 1 can (15 oz) corn (drained)

Tomatoes:

  • 1 can (10 oz) Rotel diced tomatoes with green chilies (undrained)

Taco Seasoning:

  • 1 packet taco seasoning

Cream Cheese:

  • 8 oz cream cheese (cubed)

Chicken Broth:

  • 1/2 cup chicken broth


Instructions

  1. Place the chicken in the crockpot: Add chicken breasts to the bottom of the crockpot.
  2. Add ingredients: Put black beans, corn, Rotel tomatoes, and taco seasoning on top of the chicken.
  3. Pour broth and add cream cheese: Pour chicken broth over the ingredients and top with cubed cream cheese.
  4. Cook: Cover and cook on low for 6–7 hours or high for 3–4 hours until chicken is tender.
  5. Shred chicken: Remove chicken, shred with forks, and return to the crockpot.
  6. Combine: Stir everything until creamy and well combined.
  7. Serve: Serve over rice, in tortillas, or with chips.
