  • 1 1/4 cups low sodium chicken broth, divided
  • 1/4 cup sour cream
  • 1/4 cup butter, melted


Instructions

  1. Prep and layer: Coat a 6-quart crock pot with nonstick cooking spray. Place the chicken breasts in a single layer inside the crock pot. In a small bowl, whisk together the salt, black pepper, garlic powder, and dried Italian seasoning. Sprinkle this seasoning mixture evenly over the chicken breasts. Next, layer the drained green beans over the chicken, followed by the chicken stuffing mix on top.
  2. Make sauce: In a separate bowl, combine the cream of chicken soup, 1 cup of the low sodium chicken broth, sour cream, and melted butter. Mix until smooth, then pour this sauce evenly over the stuffing layer in the crock pot. Do not stir the layers after adding the sauce.
  3. Cook: Cover the crock pot with its lid and cook on high heat for 4 to 5 hours or on low heat for 6 to 7 hours, until the chicken reaches an internal temperature of 165°F (74°C) and is fully cooked through.
  4. Fluff and serve: Once cooking is done, gently stir the stuffing with a fork to fluff it up. If the stuffing appears dry, add the remaining 1/4 cup of chicken broth to moisten. Serve the dish hot, ensuring each plate includes chicken, stuffing, and green beans.
