Description

This Crockpot Beef and Broccoli recipe offers a delicious, hands-off way to enjoy tender beef and crisp broccoli in a flavorful, Asian-inspired sauce. Slow-cooked to perfection, it’s an easy, comforting meal that pairs perfectly with steamed white rice and garnishes like sesame seeds and green onions.

Ingredients

Beef and Sauce

  • 1 ½ pounds flank steak or chuck roast, thinly sliced against the grain
  • 1 cup beef broth
  • ½ cup low-sodium soy sauce
  • ⅓ cup brown sugar
  • 1 tablespoon sesame oil
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated

Thickener and Vegetables

  • 2 tablespoons cornstarch
  • 2 tablespoons water
  • 4 cups broccoli florets

For Serving

  • Cooked white rice
  • Optional: sesame seeds and green onions for garnish

Instructions

  1. Prepare the Sauce and Beef: In your slow cooker, whisk together the beef broth, soy sauce, brown sugar, sesame oil, minced garlic, and grated ginger until well combined. Add the thinly sliced beef and stir to coat every piece thoroughly with the sauce.
  2. Slow Cook the Beef: Cover the slow cooker and cook on low for 4 to 5 hours or on high for 2 ½ to 3 hours. During this time, the beef will become tender and absorb the rich flavors of the sauce.
  3. Mix the Thickening Slurry: In a small bowl, combine the cornstarch and water, stirring until smooth and free of lumps. This slurry will be used to thicken the sauce.
  4. Add Thickener and Broccoli: Stir the cornstarch mixture into the crockpot, then gently fold in the broccoli florets. Be careful to distribute the broccoli without breaking it up.
  5. Cook Until Thickened and Tender-Crisp: Cover and continue cooking on high for another 30 minutes. The sauce will thicken to a glossy consistency, and the broccoli will become tender yet retain a crisp bite.
  6. Serve: Spoon the beef and broccoli over cooked white rice. Garnish with sesame seeds and chopped green onions if desired to add texture and a fresh pop of flavor.

Notes

  • To keep broccoli extra bright and crisp, steam it separately and stir it in just before serving.
  • Adjust the sweetness or saltiness of the sauce by modifying the brown sugar or soy sauce to your taste.
  • This recipe works well with chicken or tofu for a tasty variation.
  • Use low-sodium soy sauce to better control the salt level of the dish.
