This Crock Pot Salsa Ranch Chicken Pasta is a creamy and flavorful dish that is easy to make in the slow cooker. Tender chicken cooked with salsa, ranch dressing mix, and cream cheese, then mixed with pasta and cheddar cheese for a satisfying meal.
Ingredients
Chicken:
- 2 large boneless, skinless chicken breasts
Sauce:
- 1 cup salsa
- 1 packet dry ranch dressing mix (1 oz)
- 8 oz cream cheese (cubed)
- ½ cup chicken broth
Additional:
- 8 oz pasta (penne or rotini)
- 1 cup shredded cheddar cheese
- 2 tablespoons chopped fresh cilantro (optional)
- Salt and pepper to taste
Instructions
- Prepare Chicken: Place chicken breasts in the crock pot. Sprinkle ranch dressing mix over the chicken.
- Cook Chicken: Pour salsa and chicken broth over the chicken. Cook on low heat for 4-5 hours or high heat for 2-3 hours until chicken is tender.
- Shred Chicken: Remove chicken, shred it, then return it to the crock pot.
- Add Cheese: Add cubed cream cheese and stir until melted.
- Cook Pasta: Cook pasta until al dente, then drain and add to the crock pot.
- Combine: Gently mix pasta with the chicken mixture. Top with cheddar cheese, cover, and let cheese melt.
- Serve: Garnish with cilantro and season with salt and pepper before serving.
Notes
- For added spice, use medium or hot salsa.
- You can also add black beans, corn, or diced bell peppers for extra flavor and texture.
