Description

A hearty and comforting Crock Pot Italian Style Gnocchi Soup featuring flavorful Italian sausage, tender gnocchi, fresh spinach, and a creamy broth infused with Italian seasoning and diced tomatoes. Perfect for an easy, hands-off slow cooker meal that fills your kitchen with delicious aromas.

Ingredients

Meat and Aromatics

  • 1 lb Italian sausage (mild or spicy, depending on preference)
  • 1 medium onion, chopped
  • 2 cloves garlic, minced

Liquids and Vegetables

  • 4 cups chicken broth
  • 1 (14.5 oz) can diced tomatoes, undrained
  • 2 cups fresh spinach, chopped

Other Ingredients

  • 1 (10 oz) package frozen gnocchi
  • 1/2 cup heavy cream
  • 1 teaspoon dried Italian seasoning
  • 1/2 teaspoon red pepper flakes (optional, for heat)
  • Salt and pepper, to taste
  • Parmesan cheese, for garnish (optional)

Instructions

  1. Cook Italian Sausage: In a skillet, cook the Italian sausage over medium heat until browned, breaking it apart with a spoon. Drain excess fat and transfer the sausage to the Crock Pot.
  2. Add Aromatics and Liquids: Add chopped onion, minced garlic, chicken broth, diced tomatoes with their juices, and dried Italian seasoning to the Crock Pot. Stir well to combine.
  3. Slow Cook Soup: Cover and cook on low for 6 hours or on high for 3 hours to allow flavors to meld.
  4. Add Gnocchi: About 30 minutes before serving, add frozen gnocchi to the soup. Stir and continue cooking on the same temperature setting until the gnocchi is tender, about 20–30 minutes.
  5. Add Spinach and Cream: Stir in chopped spinach and heavy cream. Cook for an additional 10 minutes until spinach wilts and soup becomes creamy.
  6. Season Soup: Season with salt, pepper, and optional red pepper flakes to taste.
  7. Serve: Ladle soup into bowls and garnish with freshly grated Parmesan cheese if desired. Serve hot.

Notes

  • For a spicier kick, use spicy Italian sausage or add extra red pepper flakes.
  • Substitute heavy cream with half-and-half or whole milk for a lighter soup, though it will be less creamy.
  • Fresh gnocchi can be used instead of frozen, adjusting cooking time as needed.
  • Make sure to brown the sausage well to enhance the flavor.
  • This soup pairs well with crusty bread or a simple green salad.
