Description

This Crock Pot Beef Stew is a hearty and comforting dish perfect for a cozy dinner. Tender beef, flavorful broth, and a variety of vegetables simmered to perfection in a slow cooker.


Ingredients

Main Ingredients:

  • 2 pounds beef stew meat (cut into 1-inch cubes)
  • 3 tablespoons all-purpose flour
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons olive oil

Additional Ingredients:

  • 4 cups beef broth
  • 1 tablespoon tomato paste
  • 2 teaspoons Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1/2 teaspoon dried rosemary
  • 3 garlic cloves (minced)
  • 4 medium carrots (sliced)
  • 3 medium potatoes (peeled and cubed)
  • 2 celery stalks (sliced)
  • 1 medium yellow onion (diced)
  • 1 bay leaf
  • chopped fresh parsley for garnish (optional)


Instructions

  1. Coat Beef: In a large bowl, toss the beef stew meat with flour, salt, and pepper until evenly coated.
  2. Brown Beef: Heat olive oil in a skillet, brown the beef in batches, then transfer to the crock pot.
  3. Add Ingredients: Add beef broth, tomato paste, Worcestershire sauce, thyme, rosemary, garlic, carrots, potatoes, celery, onion, and bay leaf to the crock pot. Stir to combine.
  4. Cook: Cover and cook on low for 8–9 hours or on high for 4–5 hours until beef is tender and vegetables are cooked through.
  5. Adjust Seasoning: Discard the bay leaf, adjust seasoning if needed. Garnish with parsley before serving.

Notes

  • For a thicker stew, mash some of the potatoes or use a cornstarch slurry during the last 30 minutes of cooking.
  • Serve with crusty bread or over mashed potatoes.
