Ingredients
Main Ingredients
- 2 large whole eggs
- 1/2 cup butter, softened and cubed
- 1 cup granulated sugar
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 3 medium-sized bananas, mashed
Optional Add-ins
- 1 cup chocolate chips
- 1 cup nuts (walnuts or pecans), chopped
Instructions
- Mix Butter, Eggs, and Sugar: In a mixing bowl, combine the softened butter, eggs, and granulated sugar. Beat the mixture well until it is smooth and slightly fluffy.
- Add Dry Ingredients (First Half): Stir in the baking powder, baking soda, salt, and 1 cup of the all-purpose flour. Mix thoroughly until well combined.
- Add Remaining Flour: Add the second cup of all-purpose flour to the mixture and stir until the batter becomes thick and uniform.
- Incorporate Mashed Bananas: Mash the bananas thoroughly and fold them into the batter. Mix until the bananas are fully incorporated, giving the batter a rich, moist texture.
- Add Optional Ingredients: If desired, gently fold in the chocolate chips and/or chopped nuts to add texture and extra flavor to the banana bread.
- Prepare Crock Pot: Lightly butter the inside of a small crock pot dish to prevent sticking, then pour the batter evenly inside.
- Cook: Place the dish inside a 6-quart crock pot and cook on the low setting for 4 hours. The banana bread is done when the top is slightly browned and the bread springs back when touched.
Notes
- Ensure bananas are well mashed for a moist bread consistency.
- Using a small crock pot dish helps the banana bread cook evenly and thoroughly.
- The optional chocolate chips and nuts can be adjusted or omitted based on preference.
- Check the banana bread towards the end of cooking time, as crock pot models may vary in heat intensity.
- Allow the bread to cool slightly before slicing to ensure clean slices.
